- Jersey Mike’s Subs appointed Stacy Peterson as president and chief operating officer, the company said Tuesday in a press release.
- Peterson most recently served as CEO at Jeni’s Splendid Ice Creams for nearly three years, according to her LinkedIn profile. Peterson led Jeni’s during a “significant phase of growth and innovation,” the press release said.
- In her new role, Peterson will oversee Jersey Mike’s U.S. operations, marketing and technology. She will help accelerate digital transformation and “strengthen the Company’s leadership in the marketplace,” according to the press release.

Peterson joins Jersey Mike’s about six months after the chain appointed Charlie Morrison, a fellow Wingstop alum, as CEO and almost 10 months after the chain agreed to sell a majority stake to Blackstone.
Peterson worked at Wingstop for nearly nine years in non-consecutive stints. At Wingstop, her roles spanned across marketing, innovation, technology and operations. Most recently, she served as chief revenue and technology officer. She also held positions at Service King Collision Repair Centers, CB Richard Ellis, FedEx Office and Blockbuster, per the press release.
“Stacy was a key player in the growth and success of Wingstop when we partnered together there, and I look forward to bringing her expertise in digital, marketing and operations to Jersey Mike's to accelerate our growth,” Morrison said in a statement.
The sandwich chain is growing at a rapid pace, opening nearly 300 units in 2022 and 2023 and over 300 units in 2024, per the company’s franchise disclosure document. Jersey Mike’s ended 2024 with 2,989 locations in the U.S. It now has over 3,000 locations in the U.S. and Canada, per the press release. The company projects to open 270 franchised units in 2025, per the FDD.
