Wallunas has more than two decades of experience in hospitality and technology. He helped lead the digital transformation efforts at brands including Smokey Bones, Fat Brands, Domino’s, Arby’s and Coca-Cola, according to his LinkedIn profile.
The executive succeeds Steven Roach, who joined the chain in 2024.
In Wallunas’ most recent role at Smokey Bones, he led a significant overhaul of the chain’s technology infrastructure and e-commerce platform, according to a press release. Following the change, online sales tripled and guest engagement capabilities improved.
“Brian is a forward-thinking technology leader with a deep understanding of how to leverage digital innovation to advance brand performance and guest loyalty,” James O’Reilly, CEO at Ascent Hospitality Management, said in a statement. “His proven track record and strategic vision will be invaluable as we continue to modernize our operations and accelerate the digital evolution of both Huddle House and Perkins.”
In his new role, Wallunas will put in place technology that can improve operational efficiency, enhance the guest experience and drive brand growth.
Wallunas’ role also will include creating brand-specific technology strategies at Ascent’s Perkins and Huddle House concepts that he will run. Related responsibilities will entail implementing scalable digital solutions for each concept to improve guest engagement, streamline operations and boost franchisee growth, according to the press release.
“By aligning technology investments with brand goals, Wallunas will play a critical role in strengthening the digital foundation and long-term success of both restaurant systems,” the company said in a press release.
Wallunas joins the chain during a rapid period of growth and transformation. In the past year, Perkins underwent a full rebrand and developed new store formats and a fast casual concept that already has dozens of units committed, according to a press release emailed to Restaurant Dive.
During the company’s fiscal 2025, Ascent signed more than 100 new agreements. Perkins signed its first multi-unit franchise agreements for California and Texas, expanding the chain’s presence into new markets. Huddle House signed the largest deal in the chain’s history for 20 units in Houston.
